Eat what you can see!

Processed meats - AVOID it. This was the advice given to me by my ayurvedic doctor when I first went to him to discuss what I could do while recovering from cancer treatment.

Why?
1) You really don't know what is in it. How sure are you that it is made from real meat? And what part of the animal does the manufacturer use. I like Jamie Oliver video showing what is being used to make chicken nuggets... Watch it
2) Mostly, they add enhancers especially sodium nitrate... Why? Especially for red meat processed food, NaNO3 (Sodium nitrate) makes the processed meat look 'red', thus deceiving consumers that it is 'fresh' even though it has been processed for months. NaNO3 by itself is not that bad. It prevents bacteria growth in meats and reduces the need for other more harmful food additives. The problem is when NaNO3 is heated or put in acidic environment (e.g goes into our stomach). It forms a carcinogenic nitrosamines which is bad for us. In the 1920 when US forced food manufacturers to reduce NaNO3 in food, there was a drastic reduction in gastric cancer motality.
3) Lastly, MSG usually the companion of NaNO3 to enhanced food taste. I have written a number of post on this.

Someone told me this.. Eat what you see! Meaning if you cannot see a chicken meat, avoid it.
